If you think boba tea is the only kind of good Asian dessert out there, boy do we have some news for you. If anyone asked me what my favorite dessert would be, I'd scream "patbingsu" in a heartbeat. Whenever I go to Korea, all I do is spend my time sitting in an air-conditioned cafe air conditioners are rare in Korea and eat a whole one by myself.
My cousins call me the "patbingsu killer. I tend to eat the OG version, which is just the plain breaded fish with red bean filling that I can easily get from my local Asian mart. When my family brings a box of this home, I reach for it in the fridge so much that no one else even gets a chance to taste it LOL. This is a must-have for me and my best friend for every sleepover we have!
We buy three boxes, maybe more, just so we can have some for the next day too. I'm not a huge fan of cheese, so I was never head over heels for American cheesecake, but Japanese cheesecake just got me!
The best part is that it jiggles when freshly baked. There is not a single friend I haven't taken for Thai rolled ice cream and it always blows their mind, especially when they see the way it's made it's made right in front of you and the process is always entertaining to watch!
Trust me, you're missing out if you haven't had this. This is surprisingly easy to replicate at home! I love making this as a breakfast or afternoon tea time snack. Since coconut is one of my favorite ingredients, I tend to bake these coconut mochi muffins a lot.
